  • 1 cup plus 2 tablespoons all-purpose flour
  • 3/4 cup light brown sugar
  • 1/2 cup unsalted butter (melted)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (180°C) and line an 8×8 inch baking pan with parchment paper.
  2. Peel, core, and chop the apple into small chunks; toss with cinnamon and set aside.
  3. In a bowl, whisk together flour, additional cinnamon, nutmeg, baking powder, and salt.
  4. In a separate bowl, mix melted butter and brown sugar until combined. Add the egg and vanilla extract; mix well.
