  • 3/4 cup light brown sugar
  • 1/4 cup granulated white sugar
  • 2 egg yolks
  • 1 3/4 cups all-purpose flour
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 6 oz cream cheese, cold
  • 3 tbsp granulated white sugar (for filling)
  • 1/2 tsp vanilla (for filling)
  • 2 tbsp apple cider reduction
  • 1/4 cup granulated white sugar (for topping)
  • 1/4 tsp ground cinnamon (for topping)
  • 1/8 tsp ground nutmeg (for topping)
  • pinch ground allspice (for topping)
  • 12 tbsp salted butter, melted (for topping)

Instructions

  1. Prepare an apple cider reduction by boiling apple cider until it reduces to about 1/2 cup; let cool.
  2. Blend cold cream cheese with sugar and vanilla until smooth, then mix in cooled apple cider reduction.
  3. Cream softened butter with brown and white sugar until fluffy. Mix in egg yolks and vanilla.
  4. In another bowl, whisk together flour, spices, baking powder, baking soda, and salt. Gradually mix dry ingredients into wet ingredients.
  5. Scoop dough onto a parchment-lined baking sheet and create indents for filling.
  6. Spoon cheesecake filling into each indent.
  7. Bake cookies at 350°F (175°C) for about 11 minutes or until golden around the edges.
  8. Brush with melted butter and sprinkle with spiced sugar topping while warm.
