  • 2 soft- or medium-boiled eggs
  • ripe avocado (mashed or sliced)
  • 56 cherry tomatoes (quartered)
  • 1 tsp fresh chopped mint or parsley
  • 1 tsp sesame seeds
  • Salt & freshly cracked black pepper to taste
  • Optional: dash of lemon juice

Instructions

  1. Boil the eggs: Place them in a saucepan of boiling water for 7 minutes. Cool under cold running water, peel, and slice.
  2. Prep the avocado: Mash or slice the ripe avocado in a serving bowl, seasoning lightly with salt and pepper. Add lemon juice if desired.
  3. Make the tomato salad: Toss quartered cherry tomatoes with chopped herbs and pinch of salt in a mixing bowl.
  4. Assemble the bowl: Layer avocado slices and egg slices in your bowl. Top with tomato salad and sprinkle sesame seeds over everything. Add freshly cracked black pepper as desired.
