  • 200g block feta cheese
  • Olive oil
  • Garlic
  • Lemon
  • Honey
  • Fresh basil
  • Dried herbs (thyme, oregano)

Instructions

  1. Preheat the oven to 200C (390F).
  2. Wash and cube the potatoes; par-boil for 6-8 minutes.
  3. Drain and season with olive oil, herbs, salt, and pepper in a baking dish.
  4. Roast for 30-40 minutes until golden brown.
  5. Add feta and lemon, then return to the oven for 15 more minutes.
  6. Mix in mashed garlic and drizzle with honey before serving.
