Instructions

  1. Preheat the oven to 225°F and line two baking sheets with parchment paper.
  2. Slice the zucchini into 1/8 inch thick rounds using a mandolin slicer or food processor.
  3. Layer the slices in a colander, sprinkling with salt between layers, and let drain for one hour.
  4. Pat the slices dry with tea towels and arrange them on the baking sheets without overlapping.
  5. Spray lightly with avocado oil and sprinkle with smoked paprika, ground pepper, and remaining salt.
  6. Bake for 70 to 90 minutes until crisp, rotating sheets halfway through for even cooking.
  7. Let cool slightly before serving; add more salt if desired.
