Ingredients

Scale
  • 1 pound beef sirloin or flank steak, thinly sliced
  • 1 package (about 1 lb) baby bok choy, trimmed and rinsed
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons vegetable oil
  • 2 tablespoons low-sodium soy sauce

Instructions

  1. Slice the beef against the grain into thin strips. Prepare bok choy by trimming ends and rinsing leaves.
  2. Heat a wok or large skillet over medium-high heat and add one tablespoon of vegetable oil.
  3. Add sliced beef in a single layer; sear for 2-3 minutes without stirring. Flip and cook for another minute until browned but still slightly pink. Remove from the pan.
  4. Sauté minced garlic and grated ginger in the same wok until fragrant (about 30 seconds).
  5. Add bok choy and stir-fry for 2-3 minutes until tender yet bright green.
  6. Return cooked beef to the wok, pour in soy sauce, and toss everything together until well-coated.
  7. Serve hot over rice or noodles.
