Ingredients

Scale
  • 1 cup uncooked long-grain white rice
  • 1 lb ground beef
  • 1 small onion, diced
  • 4 garlic cloves, minced
  • 3 cups low-sodium beef broth
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 3 tbsp butter
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, melt 1 tablespoon of butter and sauté the diced onion for 3-4 minutes until soft.
  2. Add the ground beef to the pan; cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the uncooked rice, beef broth, Italian seasoning, salt, and pepper; stir well to combine.
  5. Bring to a boil then reduce heat to low. Cover and let simmer for 18-20 minutes until the rice is tender.
  6. Meanwhile, melt 2 tablespoons of butter in a small saucepan over low heat. Add the Parmesan cheese, cheddar cheese, and milk; stir until smooth and creamy.
  7. Pour the cheese sauce into the skillet with the beef and rice mixture; stir until well combined.
  8. Cook uncovered for another few minutes to meld flavors. Serve warm.
