  • 4 pounds beef chuck roast
  • 10 guajillo chiles
  • 5 ancho chilies
  • 3 arbol chilies
  • 2 Roma tomatoes
  • 1 white onion
  • 6 garlic cloves
  • 2 cups low-sodium beef broth
  • 2 tablespoons apple cider vinegar
  • Corn or cassava flour tortillas
  • Oaxacan cheese

Instructions

  1. Prepare the chiles: Remove stems and seeds from the guajillo, ancho, and arbol chiles. Toast them in a dry skillet for about 2 minutes until fragrant.
  2. Blend the sauce: Combine toasted chiles, Roma tomatoes, quartered onion, garlic cloves (unpeeled), apple cider vinegar, beef broth, salt, black pepper, cumin, oregano, cloves, cinnamon, ginger, and bay leaves in a blender. Blend until smooth.
  3. Cook the beef: Place beef chunks in a slow cooker and pour the blended sauce over them. Cook on low for 8 hours or high for 4 hours until tender.
  4. Assemble tacos: Heat tortillas in a pan and dip briefly into the cooking liquid. Fill with cooked beef, diced onions, chopped cilantro, and Oaxacan cheese.
