  • 3 tbsp (38 g) granulated white sugar
  • 1/2 tsp vanilla
  • 1/4 cup (50 g) granulated white sugar
  • 2 tsp (3 g) black cocoa powder
  • 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
  • 1/2 cup (40 g) black cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla

Instructions

  1. Prepare the cheesecake filling by mixing cream cheese, granulated sugar, and vanilla until smooth; refrigerate.
  2. Cream unsalted butter with light brown sugar and remaining granulated sugar until fluffy. Add egg yolks and vanilla; mix well.
  3. Whisk together all-purpose flour, black cocoa powder, baking powder, and salt in another bowl. Gradually combine with the wet mixture.
  4. Scoop tablespoon-sized portions of dough, flatten them, fill with cheesecake mixture, and roll into balls.
  5. Bake at 350°F (175°C) for 10-12 minutes until edges are firm.
