  • 12 eggs
  • 1 stalk of celery, rinsed
  • 1 green onion, rinsed
  • 4 tablespoons mayonnaise
  • 2 tablespoons Creole mustard
  • ¼ teaspoon Cajun seasoning
  • 1 teaspoon hot sauce

Instructions

  1. Boil the eggs by placing them in a pot covered with cold water. Bring to a boil over medium-high heat, then simmer for about 11 minutes.
  2. Transfer the cooked eggs to an ice bath to cool. Once cooled, peel and halve the eggs lengthwise. Remove yolks and place them in a mixing bowl.
  3. Finely chop celery and green onion; add to the yolks along with mayonnaise, Creole mustard, Cajun seasoning, and hot sauce. Mix until smooth.
  4. Fill each egg white half with the yolk mixture using a spoon or piping bag. Serve chilled on a platter garnished with extra green onion if desired.
