  • 4 Boneless, skinless chicken breasts
  • 1/3 cup Olive oil
  • 1/4 cup Balsamic vinegar
  • 2 teaspoons Dijon mustard
  • 2 teaspoons Italian seasoning
  • 2 cloves Garlic (minced)
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 2 Medium Roma tomatoes (halved and sliced)
  • 8 ounces Fresh mozzarella (sliced and halved)
  • 1 cup Large basil leaves (cut in half)
  • Balsamic glaze for garnish (optional)

Instructions

  1. Prepare the marinade by whisking together olive oil, balsamic vinegar, Dijon mustard, minced garlic, Italian seasoning, salt, and pepper. Coat the chicken in the marinade and refrigerate for at least 1 hour.
  2. Preheat your oven to 400°F (200°C) and prepare a baking sheet with non-stick spray.
  3. Make deep cuts in each chicken breast without cutting all the way through.
  4. Stuff each cut with slices of tomato, mozzarella, and basil.
  5. Bake for 25-30 minutes until the internal temperature reaches 165°F (75°C). Allow to rest for 5 minutes before serving.
