  • ¼ cup brown sugar
  • 6 tbsp unsalted butter, melted
  • ½ tsp cinnamon
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup sour cream
  • 2 medium apples, peeled & diced
  • 2 tbsp butter
  • 3 tbsp brown sugar
  • ½ tsp cinnamon
  • 1 tsp lemon juice
  • ¼ cup flour
  • 2 tbsp brown sugar
  • 2 tbsp rolled oats
  • 2 tbsp butter, melted
  • Pinch of cinnamon
  • ½ cup soft caramels or caramel sauce
  • 2 tbsp heavy cream

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Combine graham cracker crumbs, brown sugar, melted butter, and cinnamon; press into a springform pan and bake for 8–10 minutes. Cool.
  3. Beat cream cheese and sugar until smooth; add eggs one at a time, then stir in vanilla and sour cream. Pour over crust and bake for 30–35 minutes until set.
  4. Cool at room temperature, then refrigerate for at least 2 hours.
  5. Sauté apples with butter, brown sugar, cinnamon, and lemon juice until tender.
  6. Mix crumble topping ingredients and toast until golden.
  7. Layer sautéed apples over cheesecake and sprinkle crumble on top.
  8. Drizzle with warmed caramel sauce before serving.
