  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté diced onion until translucent, then add minced garlic and cook for an additional minute.
  2. Add ground beef to the skillet, breaking it up while cooking until browned (about 5-7 minutes). Drain excess fat if necessary.
  3. Stir in black beans, diced tomatoes with green chilies, and taco seasoning; let simmer for 5 minutes. Season with salt and pepper to taste.
  4. Boil salted water in a pot, add cheese tortellini, and cook according to package instructions (3-5 minutes). Drain carefully.
  5. Preheat oven to 350°F (175°C).
