  • 1 1/4 cups dry marsala apple vinegar
  • 1 1/4 cups unsalted chicken broth
  • 2 boneless skinless chicken breasts (butterflied and halved)
  • Salt and black pepper
  • 1/3 cup all-purpose flour
  • 2 Tbsp unsalted butter
  • 2 Tbsp olive oil
  • 8 oz. cremini mushrooms (sliced)
  • 3 garlic cloves (minced)
  • Fresh thyme and oregano
  • 1/3 cup heavy cream
  • Fresh parsley (for garnish)

Instructions

  1. In a medium saucepan, combine marsala vinegar and chicken broth. Heat until boiling, then reduce to simmer until it thickens to about 1 cup (15 minutes).
  2. Season chicken with salt and pepper; dredge in flour.
  3. In a skillet, heat butter and olive oil over medium-high heat. Sear chicken until cooked through (10-12 minutes). Transfer to a plate and cover with foil.
  4. Lower heat; add mushrooms to skillet and sauté until golden brown (8 minutes). Add garlic last minute.
  5. Stir in the marsala reduction, thyme, oregano; simmer while scraping browned bits from the pan. Add cornstarch mixture until thickened.
  6. Remove from heat; stir in cream. Return chicken to the skillet and spoon sauce over it.
  7. Garnish with parsley before serving.
