  • 1 tsp soy sauce
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 tbsp vegetable oil (for frying)
  • 1 tbsp vegetable oil
  • 2 garlic cloves, minced
  • 1 tbsp Thai red curry paste
  • 1 tsp turmeric powder
  • Coconut milk or broth

Instructions

  1. In a large mixing bowl, combine ground chicken, garlic, ginger, green onions, cilantro, soy sauce, breadcrumbs, egg, salt, and pepper. Mix well.
  2. Shape the mixture into meatballs about 1 inch in diameter.
  3. Heat vegetable oil in a frying pan over medium heat and cook meatballs until golden brown on all sides (about 8–10 minutes). Remove and set aside.
  4. In the same pan, sauté minced garlic until fragrant. Add Thai red curry paste and coconut milk (or broth) to create the sauce.
  5. Return meatballs to the pan and simmer for an additional 5–10 minutes to meld flavors.
