  • 1 pound boneless skinless chicken breasts
  • 3 packages (3 oz each) instant ramen noodles (no flavor packets)
  • 1 cup diced red bell pepper
  • 1 cup sliced white button mushrooms
  • ½ cup diced sweet yellow onion
  • 1 cup broccoli florets
  • 3 tablespoons regular soy sauce
  • 3 tablespoons dark soy sauce
  • 3 tablespoons hoisin sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice apple vinegar
  • 2 teaspoons sriracha
  • ¼ teaspoon white ground pepper
  • 2 thinly sliced green onions (optional)
  • ½ tablespoon toasted sesame seeds (optional)

Instructions

  1. In a mixing bowl, whisk together the sauce ingredients and set aside.
  2. Boil water in a saucepan and cook the ramen noodles for 1-2 minutes. Drain and rinse.
  3. In a nonstick skillet, heat oil and cook the diced chicken until fully cooked. Set aside.
  4. In the same skillet, sauté vegetables until tender; add garlic and ginger.
  5. Return chicken to the skillet, add noodles and sauce. Toss everything together until well combined.
  6. Serve hot, garnished with green onions and sesame seeds if desired.
