  • 2 medium sweet potatoes
  • 2 cups broccoli florets
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Toss sliced sweet potatoes in olive oil, salt, and optional seasoning; spread on a baking sheet and roast for 25-30 minutes.
  2. Rub chicken breasts with olive oil, garlic powder, paprika, salt, and pepper. Grill or sear over medium-high heat until golden brown and cooked through (internal temperature of 165°F/74°C). Let rest before slicing.
  3. Steam broccoli in a pot with boiling water until just tender (about 5-6 minutes).
  4. Assemble meal prep containers by layering steamed broccoli at the bottom, followed by roasted sweet potatoes and sliced chicken on top.
