  • 4 ounces fresh mushrooms (sliced)
  • 1 medium zucchini (sliced)
  • 2 tablespoons butter
  • 2 cups shredded Italian cheese blend
  • 1/2 cup sour cream
  • 2 green onions (sliced)
  • 2 large eggs (beaten)
  • 2 teaspoons dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F.
  2. Dice the chicken into bite-sized pieces.
  3. In a large frying pan over medium heat, melt butter and add diced chicken, zucchini, and mushrooms. Season with salt and pepper. Cook until tender (about 5 minutes) and drain excess moisture.
  4. In a mixing bowl, combine shredded cheese, sour cream, green onions, beaten eggs, basil, salt, and pepper until well mixed.
  5. Add the drained chicken mixture to the cheese mixture and stir to combine.
