  • 1 lb boneless chicken thighs, cut into bite-sized pieces
  • 1 medium zucchini, sliced
  • 1/4 cup light soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon oyster sauce
  • 3 cloves garlic, smashed
  • Cooking oil
  • 1 teaspoon cornstarch
  • 2 teaspoons sugar (or honey)
  • 1 tablespoon rice apple vinegar (optional)

Instructions

  1. In a mixing bowl, combine chicken with cornstarch, soy sauce, sesame oil, sugar (or honey), vinegar (if using), and garlic. Marinate for at least 30 minutes.
  2. Heat cooking oil in a wok over medium-high heat. Add the marinated chicken (including marinade) and stir-fry for about 2 minutes until chicken is no longer translucent.
  3. Remove chicken from the pan and set aside. In the same pan, stir-fry sliced zucchini for about 5 minutes until tender.
  4. Return chicken to the pan with zucchini, add oyster sauce and ground black pepper if desired. Stir-fry everything together for another 2-3 minutes until fully cooked.
  5. Serve hot over rice or noodles.
