  • 1 lb flank steak
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 1/4 cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked rice (white or brown)
  • 1 can black beans, rinsed and drained
  • 1 cup corn
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved

Instructions

  1. In a medium bowl, mix lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and pepper to create the marinade.
  2. Place the flank steak in a resealable bag and pour the marinade over it. Seal and refrigerate for at least 30 minutes (preferably up to 4 hours).
  3. Cook rice according to package instructions.
  4. Heat black beans in a small saucepan until warmed through.
  5. Preheat your grill or grill pan over medium-high heat. Grill the marinated steak for about 4–5 minutes per side or until desired doneness.
  6. Let the steak rest before slicing against the grain.
  7. Assemble bowls by starting with rice as the base and adding beans, corn, sliced steak, avocado, and cherry tomatoes on top.
