  • 2 lbs beef cubes (chuck or stew meat)
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 (13.5 oz) can coconut milk
  • 1 cup beef or chicken broth
  • Juice of lime
  • Fresh cilantro for garnish

Instructions

  1. Season the beef with salt and pepper. In a large pot, heat oil over medium-high heat. Sear the beef until browned on all sides, then set aside.
  2. In the same pot, sauté onions until softened. Add garlic and ginger; cook until fragrant.
  3. Stir in curry powder, cumin, coriander, and turmeric. Return beef to the pot.
  4. Pour in coconut milk and broth; bring to a gentle simmer.
  5. Cover partially and simmer for about 45 minutes until beef is tender.
  6. Stir in lime juice before serving.
