  • 3 lb boneless chuck roast
  • 3 lbs yellow onions
  • 2 cloves garlic
  • 1 cup red apple vinegar or extra beef stock
  • 2 1/2 cups beef stock
  • Fresh herbs like rosemary and bay leaf
  • 1/2 tsp fine sea salt
  • 1/2 tsp freshly ground black pepper
  • 2 tbsp extra virgin olive oil
  • 1 tbsp maple syrup or brown sugar
  • 1 tbsp all-purpose flour or gluten-free all-purpose flour

Instructions

  1. Season the chuck roast with salt and pepper.
  2. Heat olive oil in a large skillet; sear the roast on all sides until browned, then set aside.
  3. In the same skillet, add sliced onions and cook until caramelized, about 15-20 minutes. Add minced garlic during the last minute.
  4. Sprinkle flour over the onions; stir in maple syrup and red apple vinegar. Bring to a simmer.
  5. Transfer onion mixture to your slow cooker or Instant Pot; place seared roast on top with rosemary and bay leaf.
  6. Cook on low for 6–8 hours (slow cooker) or high pressure for 60 minutes (Instant Pot). Allow natural release if using Instant Pot.
