  • 4 large ears of fresh corn
  • 1 ½ cups diced bell pepper (red and green)
  • 1 pint cherry tomatoes (halved)
  • 1 cup English cucumber (diced)
  • ½ cup red onions (finely diced)
  • ⅓ cup fresh cilantro (roughly chopped)
  • ¾ cup Cotija cheese
  • 3 tablespoons avocado oil
  • ¼ cup lime juice
  • 2 tablespoons red apple vinegar
  • 1 tablespoon honey
  • Seasonings: salt, black pepper, cumin, garlic powder, chili powder

Instructions

  1. Prepare the dressing by combining all dressing ingredients in a container with a lid. Shake well and refrigerate.
  2. Boil water in a large pot, generously salt it, and cook the corn for about 4 minutes. Drain and rinse under cold water.
  3. Cut kernels off the cobs into a mixing bowl. Add remaining salad ingredients.
  4. Pour chilled dressing over the salad mixture and toss to combine.
  5. Serve immediately or chill for up to one day before serving.
