  • 250 g all-purpose flour
  • 110 g whole milk
  • 1 large egg
  • 50 g granulated sugar
  • Pinch of salt
  • 20 g softened butter
  • 3 g active dry yeast (or 9 g fresh yeast)
  • 1 tablespoon orange marmalade
  • 1 teaspoon vanilla extract
  • 80 g softened butter (for layering)
  • For glazing: 1 egg mixed with 1 tablespoon cream or milk
  • Granulated sugar for topping

Instructions

  1. In a mixing bowl, combine flour, yeast, egg, milk, vanilla extract, and orange marmalade. Mix until incorporated and let rest for ten minutes.
  2. Add sugar and salt; mix until absorbed and let rest for another ten minutes.
  3. Incorporate the 20g of softened butter into the dough until smooth. Cover and refrigerate for one hour.
  4. Roll out the dough into a rectangle (50cm x 30cm) and spread the softened 80g of butter on top.
  5. Fold the dough into sections toward the center to create layers; chill wrapped in plastic wrap for one hour.
  6. Roll out again into a rectangle (20cm x 35cm) and cut into triangles.
  7. Roll each triangle from base to tip; place on a parchment-lined baking sheet.
  8. Brush with the egg mixture, sprinkle with sugar, cover until doubled in size (about 30 minutes).
  9. Preheat oven to 180°C (static) or 170°C (fan), bake for about 20 minutes until golden brown.
