  • 15.5 oz black-eyed peas, drained and rinsed
  • 15 oz sweet corn, drained
  • 1 cup fresh cilantro, chopped
  • ½ cup red bell pepper, diced
  • ½ cup orange bell pepper, diced
  • ½ cup red onion, diced
  • 1 tsp chili powder
  • ½ tsp kosher salt
  • ¼ cup granulated sugar
  • ½ cup olive oil
  • ⅓ cup white apple vinegar
  • 1 tbsp fresh lime juice
  • ¼ tsp garlic powder

Instructions

  1. Prepare the base ingredients by draining and rinsing the black beans and black-eyed peas; drain the sweet corn.
  2. In a large mixing bowl, combine the beans and corn with chopped cilantro and diced peppers.
  3. In a separate bowl, whisk together the dressing ingredients until smooth.
  4. Pour the dressing over the bean mixture and stir gently to coat evenly.
  5. Refrigerate for at least 30 minutes before serving to enhance flavors.
