  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 4 skinless salmon fillets
  • ¼ tsp salt
  • 1 tsp garlic powder
  • 1 tbsp Cajun seasoning
  • 4 garlic cloves (minced)
  • 1 yellow onion (finely chopped)
  • ½ tsp salt
  • 1 tsp black pepper
  • 3 sprigs of thyme
  • 1 cup orzo
  • 3 ears corn
  • 2 ½ cups chicken broth
  • 1 cup grated Parmesan cheese
  • 1 tbsp lemon juice
  • 1 cup heavy cream

Instructions

  1. Pat dry the salmon fillets and season both sides with salt, garlic powder, and Cajun seasoning.
  2. Shuck the corn and cut kernels off the cobs.
  3. In a nonstick skillet, heat olive oil and butter over medium-high heat; sear the salmon for 3–4 minutes per side until golden brown. Remove from skillet.
  4. In the same skillet, cook minced garlic and chopped onion until soft. Add salt, pepper, thyme, orzo, and corn; toast for 1 minute.
  5. Pour in chicken broth; bring to a boil then reduce heat to simmer uncovered for about 10 minutes until orzo is nearly al dente.
  6. Stir in Parmesan cheese, heavy cream, and lemon juice; simmer for an additional 2 minutes.
  7. Return salmon to skillet; simmer together for another 2–3 minutes until heated through.
