  • 1 ½ lb chicken breasts
  • 4 carrots, sliced
  • 3 celery stalks, chopped
  • 1 onion, diced
  • 810 cups low-sodium chicken broth
  • 1 cup uncooked wild rice (rinsed)
  • 4 garlic cloves, minced
  • 1 bay leaf
  • 1 Tbsp Italian seasoning
  • 1 tsp thyme
  • 1 tsp parsley
  • ½ tsp sea salt
  • ½ tsp cracked pepper
  • ¼ cup flour (gluten-free optional)
  • ½ cup half and half
  • ½ cup whole milk

Instructions

  1. Prepare your ingredients by dicing the onion and chopping the carrots and celery.
  2. In the slow cooker, layer the chicken breasts at the bottom. Top with garlic and seasonings.
  3. Add the onions, carrots, celery, broth, and rinsed wild rice. Place the bay leaf on top.
  4. Cover and cook on low for 6-8 hours until the rice is soft.
  5. Once cooked to an internal temperature of 165°F, shred the chicken and return it to the soup.
  6. Whisk flour with half and half and whole milk until smooth; stir into the soup until creamy. Adjust thickness with additional broth if desired.
  7. Serve hot with crusty bread.
