  • 10 oz rotini pasta
  • 1 cup heavy cream
  • 4 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Cook the rotini in salted boiling water until al dente. Drain and reserve some pasta water.
  2. Season chicken with Cajun and Italian seasonings, salt, and pepper. Sear in a skillet with olive oil over medium-high heat for about 4-5 minutes on each side until golden brown.
  3. In the same skillet, reduce heat and add butter and garlic; sauté for one minute.
  4. Stir in heavy cream, Velveeta, mozzarella, and Parmesan until melted and combined. Adjust consistency with reserved pasta water as needed.
  5. Toss cooked rotini into the sauce until well coated, then simmer briefly to absorb flavors.
