  • 2 pounds zucchini (sliced)
  • ½ cup heavy cream
  • ½ cup sour cream
  • 1 cup grated parmesan cheese (divided)
  • 1 cup shredded mozzarella cheese (divided)
  • 3 cloves garlic (minced)
  • 2 tablespoons butter (cut into small cubes)
  • salt for zucchini
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • ½ teaspoon fresh ground black pepper

Instructions

  1. Preheat your oven to 425°F.
  2. Cut zucchini into ¼-inch slices, sprinkle with salt, and let sit for 15 minutes before patting dry.
  3. Butter a baking dish and layer the zucchini slices.
  4. In a bowl, whisk together heavy cream, sour cream, Italian seasoning, onion powder, salt, pepper, and half of the parmesan cheese.
  5. Melt butter in a saucepan over medium heat; sauté garlic until fragrant. Pour in the cream mixture and cook until bubbling.
  6. Stir in half of the mozzarella cheese until melted.
  7. Pour the creamy sauce over the zucchini and sprinkle remaining cheeses on top.
  8. Bake for 18-22 minutes until golden brown.
