  • 1 cup heavy whipping cream
  • 2 1/2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add chicken seasoned with Italian seasoning, salt, and pepper; cook until browned (4-5 minutes).
  2. Add onions, carrots, celery, sundried tomatoes, and garlic; sauté until translucent (3-4 minutes).
  3. Sprinkle flour over the mixture and stir well. If using tomato paste, incorporate it now.
  4. Gradually whisk in chicken broth while stirring continuously to prevent lumps.
  5. Bring to a boil, add pasta along with additional Italian seasoning; cover and simmer for about 20 minutes.
  6. Stir in heavy cream, spinach, and Parmesan cheese; simmer for an additional 5 minutes.
