  • 2 (4 ounce) cans mild green chilies (with juices)
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 4 ounces cream cheese (1/2 block of Philly) (softened)
  • Salt & pepper (to taste)
  • Lime juice
  • Avocado
  • Cilantro
  • Mexican cheese blend
  • Tortilla strips

Instructions

  1. In a large pot over medium heat, add olive oil and sauté chopped onion for 5-7 minutes until translucent.
  2. Add bite-sized chicken pieces and cook until no longer pink.
  3. Stir in minced garlic and cook for about 30 seconds.
  4. Pour in chicken broth, drained white beans, mild green chilies, chili powder, cumin, and oregano. Bring to a boil then reduce heat to simmer for about 10 minutes.
  5. Cut softened cream cheese into cubes; stir into the pot until fully melted and combined.
