  • 12 ounces dry pasta
  • 2 ½ pounds zucchini
  • ¾ cup extra virgin olive oil
  • 1 cup diced sweet onion
  • 1 ½ tablespoons minced garlic
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • Pinch red pepper flakes
  • 1 cup heavy cream
  • ¾ cup freshly grated Romano cheese
  • Fresh basil
  • Fresh oregano
  • Fresh mint

Instructions

  1. Cook the pasta according to package instructions, reserving one cup of pasta water before draining.
  2. Shred zucchini using a box grater or food processor; set aside.
  3. In a large skillet over medium-high heat, sauté diced onion in olive oil until softened.
  4. Add red pepper flakes and minced garlic; cook for one minute.
  5. Stir in shredded zucchini, salt, pepper, and half of the herbs; cover and cook on medium-low for 15 minutes.
  6. Remove the cover; stir in heavy cream and remaining herbs until heated through.
  7. Mix in grated Romano cheese; adjust consistency with reserved pasta water if needed.
