  • 1 cup long-grain white rice
  • 2 cup chicken broth
  • 1 cup fresh or canned pineapple, diced
  • 1 red bell pepper, diced
  • 3 tablespoon soy sauce
  • 2 tablespoon honey
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add bite-sized chicken pieces and cook until browned and cooked through, about 7-10 minutes. Remove from the pan.
  2. In the same pan, sauté diced onion and minced garlic until fragrant, about 3 minutes.
  3. Stir in long-grain white rice, chicken broth, soy sauce, honey, ground ginger, and optional ground cumin. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender.
  4. Fold in diced pineapple and red bell pepper (and any additional veggies like peas) into the rice mixture. Cook for another 5 minutes until heated through. Return cooked chicken to the pan and mix gently. Season with salt and pepper before serving.
