  • 170 g digestive biscuits
  • 100 g melted butter
  • 900 g cream cheese (softened)
  • 200 g caster sugar
  • 160 g sour cream
  • 1½ teaspoons vanilla extract
  • Pinch of salt
  • 4 large eggs (lightly beaten)
  • 50 g granulated sugar (for topping)

Instructions

  1. Preheat your oven to 180°C (350°F). Crush the digestive biscuits into fine crumbs and combine with melted butter. Press into the bottom of a springform pan.
  2. Beat the cream cheese until smooth. Add caster sugar, sour cream, vanilla extract, and salt; mix well. Gradually add the beaten eggs until just combined.
  3. Pour the filling over the crust in the pan and bake in a water bath for about 60 minutes or until set but slightly jiggly in the center.
  4. Allow cooling at room temperature before refrigerating for at least four hours or overnight. Sprinkle granulated sugar over the top and use a kitchen torch to caramelize until golden brown.
