  • 2 tsp Butter vanilla emulsion
  • 2 & 1/3 cup flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/2 package instant vanilla pudding mix (1.7 oz)
  • 1/2 cup milk
  • 4 oz cool whip
  • 1 medium banana (slightly ripe, chopped roughly)
  • Nilla wafers (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until smooth. Add the egg and butter vanilla emulsion; mix well.
  3. In another bowl, combine flour, salt, and baking powder. Gradually add dry ingredients to wet mixture until fully combined.
  4. Scoop tablespoon-sized portions onto the prepared baking sheet and bake for about 8 minutes or until lightly golden. Allow cooling on a wire rack.
  5. For the topping, combine instant vanilla pudding mix with milk in a separate bowl until thickened. Gently fold in cool whip.
  6. Once cookies have cooled, spoon banana pudding onto each cookie, top with chopped bananas, and finish with Nilla wafers.
