  • 16 oz cream cheese (room temperature)
  • 1/2 cup sour cream
  • 3 large eggs (room temperature)
  • 1/4 cup cornstarch
  • 2 teaspoons vanilla extract
  • 5 medium apples (peeled, cored, and chopped)
  • 1/4 cup brown sugar
  • 1/2 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 cup rolled oats
  • 1/2 cup flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. For the crust, mix graham cracker crumbs, granulated sugar, and cinnamon. Stir in melted butter and press into the bottom of a springform pan.
  3. In a bowl, beat cream cheese until smooth. Mix in sour cream, eggs one at a time, cornstarch, and vanilla until well combined.
  4. Toss chopped apples with brown sugar, nutmeg, and lemon juice.
  5. Pour half of the cheesecake mixture over the crust, followed by the apple filling, then top with remaining cheesecake mixture.
  6. Bake for about 60 minutes until set but slightly wobbly in the center.
  7. Combine oats and flour for the crumble topping; sprinkle over cheesecake after initial baking.
  8. Return to oven for an additional 10–15 minutes until golden brown.
  9. Allow cooling completely before refrigerating for at least four hours or overnight.
