  • 5 butter croissants
  • 1/2 cup unsalted butter (room temperature)
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 cup almond flour
  • 10 tbsp sliced almonds
  • 3 tbsp powdered sugar
  • 1 cup water
  • 1/2 cup granulated sugar (for simple syrup)
  • 1/2 tsp salt
  • 2 tbsp all-purpose flour

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a small saucepan, combine 1 cup water with 1/2 cup granulated sugar over medium heat until dissolved; let cool.
  3. In a mixing bowl, blend 1/2 cup butter, salt, and 1/2 cup sugar until creamy. Add eggs one at a time, then mix in almond flour and all-purpose flour until smooth. Transfer to a piping bag.
  4. Slice each croissant in half and brush the insides with simple syrup.
  5. Pipe the almond cream into each croissant half, reassembling them afterward.
  6. Spread more filling on top and sprinkle generously with sliced almonds.
  7. Bake for about 15-20 minutes until golden brown; dust with powdered sugar before serving.
