  • 1 package of pre-made pie crust (2 rolls)
  • 1 pound lean ground beef (90% lean recommended)
  • 1/4 cup diced yellow onion
  • 1/2 medium diced bell pepper
  • 1 teaspoon cumin
  • 1 teaspoon minced garlic
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon chili powder
  • 1 cup Mexican blended cheese
  • 1 egg (for egg wash)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  2. In a skillet over medium heat, brown the ground beef. Add onions and bell pepper; cook until softened. Drain excess fat.
  3. Season with cumin, garlic, salt, pepper, and chili powder; cook for another 2 minutes.
  4. Roll out the pie crust and cut into circles. Place meat filling and cheese in the center of each circle.
  5. Fold in half and seal the edges with a fork. Brush each empanada with beaten egg.
  6. Bake for 12-15 minutes until golden brown.
