  • 8 oz. dry rotini pasta
  • 9 oz. hard turkey slices, chopped
  • 6.5 oz. turkey pepperoni, chopped
  • 1 cup canned artichoke hearts, drained & quartered
  • 2 cups cherry tomatoes, halved
  • 1 cup olives, pitted & halved
  • ½ cup pepperoncini, sliced
  • 8 oz. mozzarella pearls
  • ¼ cup red onion, sliced thin
  • ⅓ cup fresh basil, sliced thin
  • ½ cup olive oil
  • ¼ cup red apple vinegar
  • 2 garlic cloves, minced
  • 1 Tbsp Italian seasoning
  • ¼ tsp red pepper flakes
  • Salt & black pepper, to taste

Instructions

  1. Cook the rotini pasta according to package directions until al dente; drain and cool.
  2. In a small bowl or jar, whisk together olive oil, red apple vinegar, minced garlic, Italian seasoning, red pepper flakes, salt, and black pepper. Chill.
  3. Prepare salad ingredients: chop turkey slices and turkey pepperoni; halve cherry tomatoes; slice olives and red onion; thinly slice fresh basil.
  4. In a large mixing bowl, combine cooled pasta with all prepared ingredients and toss with the chilled vinaigrette.
  5. Let chill for at least 30 minutes before serving to enhance flavors.
