  • 8 large store-bought croissants
  • 1 cup shelled unsalted pistachios
  • 1/4 cup powdered sugar
  • 2 tablespoons softened butter (for filling)
  • 1 teaspoon vanilla extract
  • 4 ounces dark chocolate
  • 2 tablespoons butter (for chocolate mixture)
  • Chopped pistachios (for garnish)

Instructions

  1. In a food processor, blend shelled pistachios until finely ground. Combine with powdered sugar, softened butter, vanilla extract, and salt; process until smooth. Chill for 15 minutes.
  2. Melt dark chocolate and 2 tablespoons of butter in the microwave until smooth.
  3. Preheat oven to 350°F (175°C).
  4. Slice each croissant horizontally without cutting all the way through. Spread 1–2 tablespoons of chilled pistachio filling inside and drizzle with melted chocolate.
  5. Gently close croissants and place on a parchment-lined baking sheet. Optionally brush tops with beaten egg for shine.
  6. Bake for about 5–7 minutes until warmed through.
  7. Garnish with additional melted chocolate, chopped pistachios, powdered sugar, and drizzle with honey if desired before serving warm.
