  • 2 cups granulated sugar
  • 1/2 cup brown sugar
  • 1 cup canola oil
  • 4 large eggs
  • 1 15oz can pumpkin puree (not pumpkin pie filling)
  • 2/3 cup water
  • 1 tsp vanilla extract
  • 1/2 cup cold butter, cubed for topping
  • 1/2 cup brown sugar for topping
  • 3/4 cup all purpose flour for topping
  • 1 tsp ground cinnamon for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare two 8×4 bread pans by greasing them or lining them with parchment paper.
  2. In a large bowl, whisk together flour, salt, baking soda, and spices until well combined.
  3. Stir in granulated sugar and brown sugar until evenly mixed.
  4. Make a well in the center and add canola oil; mix until just combined.
  5. Incorporate eggs two at a time, mixing thoroughly after each addition.
  6. Stir in pumpkin puree, water, and vanilla extract until fully combined.
  7. Divide the batter between the prepared pans and set aside while making the crumb topping.
  8. In another bowl, mix flour, brown sugar, and cinnamon; cut in cold butter until coarse crumbs form.
  9. Sprinkle the crumb topping over the batter in each pan.
  10. Bake for 55-65 minutes or until a cake tester comes out clean. Allow to cool before slicing.
