  • 1/4 cup brown sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/3 cup eggnog
  • 2/3 cup unsalted butter for frosting
  • 34 cups powdered sugar
  • 1/4 teaspoon nutmeg for frosting
  • 1/2 teaspoon vanilla extract for frosting
  • 1/4 teaspoon salt for frosting
  • 35 tablespoons eggnog for frosting
  • 12 tablespoons cornstarch (if needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, nutmeg, cinnamon, baking soda, and salt.
  3. In another bowl, cream softened butter with granulated and brown sugars until light and fluffy.
  4. Beat in egg yolks, vanilla extract, and eggnog until well combined.
  5. Gradually mix dry ingredients into wet ingredients until just combined.
  6. Drop tablespoon-sized amounts of dough onto the prepared baking sheet and bake for about 10 minutes or until edges turn golden.
  7. Let cool on the baking sheet for 5 minutes before transferring to a cooling rack.
  8. For frosting, beat together butter, powdered sugar, nutmeg, vanilla extract, and gradually add eggnog until desired consistency is reached.
  9. Once cookies are completely cool, frost generously.
