  2. Knead on a floured surface until smooth and let rest for 30 minutes.
  3. Roll softened butter between parchment paper into a rectangle and chill until firm.
  4. Roll out the dough into a large rectangle, encasing the chilled butter completely.
  5. Fold the dough into thirds and roll out again; repeat this process two more times.
  6. Cut triangles from the dough, place chocolate at the base, and roll tightly to shape croissants.
  7. Let rise until doubled in size, then bake at 400°F (200°C) for about 20 minutes until golden brown.
