  • 1/3 cup organic sugar
  • 1 stick Earth Balance butter (cut into small pieces)
  • 1 1/2 cups all-purpose flour
  • 2 tsp corn starch
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/3 cup boiling water

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a bowl, mix sliced peaches with sugars, corn starch, lemon juice, cinnamon, and nutmeg.
  3. Transfer peach mixture to an ungreased baking dish and bake for about 10 minutes.
  4. For the topping, mix flour, sugars, baking powder, salt in another bowl. Cut in butter until crumbly.
  5. Stir in boiling water until combined.
  6. Spoon topping over baked peaches and sprinkle with cinnamon sugar.
  7. Bake for an additional 35 minutes until topping is golden brown.
