  • 56 cherry tomatoes, halved
  • 1/2 cup diced cucumber
  • 1/2 cup crumbled feta cheese
  • 1 tsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning or paprika
  • Salt & pepper, to taste
  • 1 tbsp olive oil (for dressing)
  • 1 tsp lemon juice or balsamic vinegar (for dressing)

Instructions

  1. Grill the chicken breast coated in olive oil, garlic powder, Italian seasoning (or paprika), salt, and pepper for 5–6 minutes per side until fully cooked. Let rest before slicing.
  2. In a large salad bowl, layer arugula (or mixed greens), cherry tomatoes, cucumber, feta cheese, and garlic croutons. Top with sliced avocado and grilled chicken.
  3. Drizzle with olive oil and lemon juice or balsamic vinegar if desired. Serve immediately.
