  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk (or half-and-half)
  • 1/2 cup heavy cream (optional)
  • 2 cups sharp cheddar cheese, shredded
  • Fresh herbs: parsley, chives, thyme
  • Salt and black pepper to taste

Instructions

  1. Prepare the potatoes by peeling and cutting them into uniform cubes; rinse under cold water.
  2. In a large pot over medium heat, melt butter and sauté the chopped onion until softened (about 5–7 minutes). Add minced garlic and cook for an additional 1–2 minutes.
  3. Sprinkle flour over the mixture and stir continuously for about 1–2 minutes to form a roux.
  4. Gradually whisk in broth while scraping the bottom of the pot; bring to a simmer.
