  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable or chicken broth
  • 1 cup ditalini pasta (or any small pasta shape)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • Freshly grated Parmesan cheese for garnish
  • Fresh basil or parsley, chopped for garnish
  • Crusty bread for dipping

Instructions

  1. In a large pot over medium heat, add olive oil. Once heated, sauté diced onion, carrot, and celery until tender (about 5-7 minutes). Add minced garlic and cook for an additional minute.
  2. Stir in drained cannellini beans, red kidney beans, and diced tomatoes; mix well.
  3. Pour in vegetable or chicken broth and bring to a boil over high heat.
  4. Add ditalini pasta along with oregano, basil, crushed red pepper flakes, salt, and black pepper. Reduce heat to low and simmer until the pasta is al dente (approximately 10 minutes).
  5. Serve hot, garnished with freshly grated Parmesan cheese and chopped herbs alongside crusty bread.
