  • 2 small white fish fillets (tilapia, cod, or similar)
  • 1 tbsp olive oil (divided)
  • 1 tsp dried Italian herbs
  • Salt & freshly cracked black pepper to taste
  • 1 cup asparagus spears, trimmed
  • 1 ripe avocado, sliced or halved
  • 1 cup cherry tomatoes, halved

Instructions

  1. Season the fish fillets with ½ tbsp olive oil, dried herbs, salt, and pepper. Grill or pan-sear over medium heat for about 3–4 minutes on each side until cooked through.
  2. In the same pan used for the fish, add a drizzle of olive oil and sauté asparagus with salt and pepper for approximately 3–4 minutes until tender-crisp.
  3. While cooking, slice the avocado and halve the cherry tomatoes.
  4. Plate the grilled fish alongside sautéed asparagus and garnish with avocado slices and cherry tomatoes before serving.
