  • 1 cup cold unsalted butter (for layering)
  • 1 egg (for brushing)
  • 1 tablespoon milk (for brushing)

Instructions

  1. In a mixing bowl or stand mixer, combine flour, sugar, and salt. Dissolve yeast in warm milk; let sit until foamy (5-10 minutes). Mix in melted butter and knead until smooth. Shape into a rectangle, wrap in plastic wrap, and refrigerate for 1 hour.
  2. Shape cold butter into a flat square between parchment sheets. Roll chilled dough into a larger square to enclose the butter completely.
  3. Roll out into a long rectangle; fold like a letter to create layers. Chill for 30 minutes and repeat this process two more times.
  4. Roll out the final dough to about 1/4 inch thick and cut triangles. Shape each triangle by rolling from the base to the tip.
  5. Let shaped croissants rise for 1.5 to 2 hours at room temperature while preheating your oven to 400°F (200°C). Brush with an egg-milk wash before baking for about 18–22 minutes until golden brown.
