  • 100 grams granulated sugar (1/2 cup)
  • 118 milliliters water (1/2 cup)
  • 1/2 tablespoon lemon juice

Instructions

  1. Hull the strawberries by removing the core and leaves.
  2. In a blender, combine hulled strawberries and water; puree until smooth.
  3. Strain the puree through a fine mesh sieve into a saucepan, discarding the seeds and pulp.
  4. Over medium heat, add sugar and lemon juice to the puree; stir until dissolved.
  5. Bring to a gentle boil while stirring occasionally for about 10 minutes until thickened.
  6. Allow to cool before transferring to an airtight container for storage in the fridge.
